So, as I talk about it so much, I needed to have a page to share some of my favourites...

One of my favourites - and so many varieties to try.. we had it as our weekly lockdown challenge trying each flavour in turn!

Home-made Victorian sponge..

Nice and simple, I've just moved to the 'weigh the eggs' method, and it's getting great reviews!

This is not really a recipe - as much as the method I use, so please check oven temp, cooking times etc with a proper recipe if you like instructions! 

 

4 eggs - weighed without shells (obviously, vary number of eggs depending on size of cake/number of cupcakes)

Same amount of stork, caster sugar, self-raising flour and a tsp of vanilla essence.

I find stork works really well, and is cheaper than butter!

I whisk the sugar and stork together for quite a bit first, to get it fluffy, and I also add the vanilla essence in at the same time..

I then alternate (the equivalent of one at a time) egg and a couple of tablespoons of the weighed flour and then let it whisk again for a bit.. it incorporates lots of air and makes it lovely and light..

Into the tin and bake for the right amount of time!! 

I serve these nice and simply with a nice jam and plenty of home-made buttercream (again simple - stork and icing sugar at 1:2 ratio, with a little vanilla or other flavour).
