So, as I talk about it so much, I needed to have a page to share some of my favourites...

Home-made Victoria sponge..

 

I've started using the 'weigh the eggs' method - so weigh the eggs without shells, then use the same weight of sugar, self-raising flour and spread.. (I use Stork).. and then a little vanilla extract.

I think this was a 4 egg sponge..

My trick is to whisk the sugar and spread for quite a while before adding anything else to make it light and fluffy.. 

I have no idea what temperature or for how long! I think about 160/180 fan and about 40 minutes - but I tend to go by smell and the skewer test (when I remember I've a cake in the over that is!) 

 

I've also adapted this by adding some espresso to the cake mixture before baking, and then a little more to the buttercream - voila, coffee cake!!
